{football friday} lightened up pimento cheese

I am publishing today's {football friday} post en route to Knoxville, TN to watch the University of Alabama play the University of Tennessee.
Wait... What?
But Regan... you're an Auburn fan. Why are you doing THAT?
Because I married an Alabama fan and sometimes I do things in the name of marital bliss (It’s either that or the fact that I have a strong desire to see Neyland stadium, one of the largest in the country no matter who is playing.)
Auburn’s season may be nightmarish this year, but I’ll always bleed orange & blue... even when I’m in a stadium full of in conference rivals. I anticipate having a great time, because let’s face it... if you don’t really care who wins, what’s there to get worked up about? I just plan on enjoying the scenery :)
Ironically, I got the idea for this week’s post from one of my favorite Alabama fans - Holley Grainger, of My Recipes online-video fame (If you’ve never watched Holley’s videos on CookingLight.com & MyRecipes.com, you simply must. She’s a made-for-the-camera RD.) So if any of you savvy football fans are sitting there thinking “Oh yeah, Regan... a Big Orange bowl of cheese spread. No, that’s not showing a little bias toward Tennessee in this week’s match up,” blame Holley.
Holley also recommends jazzing up pimento cheese on your menu by spreading over pumpernickel party slices or sliced cucumber and topping with tomato & bacon. I opted out of the bacon this week & instead used some of the basil bounty I’m enjoying from my Aerogarden. Either choice is delish, so give ‘em a try.

Lightened Up Pimento Cheese
Ingredients
- 1 cup (4 ounces) shredded sharp cheddar cheese (I used Cabot Seriously Sharp Cheddar)
- 1 cup (4 ounces) shredded reduced-fat sharp cheddar cheese (I used Cabot Sharp Light Cheddar)
- 2 tablespoons plain Greek-style yogurt (I used Cabot)
- 2 tablespoons mayonaise (I used Dukes)
- 1 (4-ounce) jar chopped pimentos, chopped
- 1/2 teaspoon Kosher salt
- Freshly ground black pepper
- Dash of hot sauce
Instructions
Combine all ingredients and enjoy!
