steamed artichokes with apple-butter reduction

The Professional Palate - Regan Jones RD in apple cider, apple juice, artichokes, butter

 

This recipe couldn't be any simpler and any more special. Don't ruin the nutritional value of your artichokes by bathing them in a heavy mayonnaise or all butter sauce. The sweet, earthy flavor of the reduced apple juice with just a touch of butter is a much tastier (and healthier) dipping option.

Ingredients:

1 cup apple juice or apple cider

1 tablespoon butter

steamed, fresh artichokes

 

Instructions:

Bring apple juice to a boil over medium heat and boil until reduced to 1/4 cup. Remove from heat and add butter. Stir until butter melts. Serve with artichokes for dipping.
