Mandarin Chicken Wraps

The Professional Palate - Regan Jones RD in Main Dish, wrap

Recipe developed for Cabot Creamery Cooperative

1 (11-ounce) can mandarin oranges
1 tablespoon low-sodium soy sauce
1/4 teaspoon dried ground ginger
3 tablespoons hoisin sauce, divided
2 cups shredded cooked chicken
4 large whole-wheat tortillas
1 small carrot, grated
1/2 medium zucchini, grated
1 cup Cabot 75% or 50% Reduced Fat Sharp Cheddar, grated

Pour 2 tablespoons of juice from mandarin oranges into medium bowl; add soy sauce, ginger and 2 tablespoons of hoisin sauce, stirring to combine. Add chicken and toss to coat.

Spoon 1/4 cup of mandarin oranges onto paper towel and blot dry. (Reserve remaining oranges for another use.)

Spread remaining hoisin sauce evenly over one side of each tortilla. Divide chicken mixture evenly among tortillas. Top with carrot, zucchini, oranges and cheese; roll up. Slice in half diagonally and serve. Yield: 4 servings
