graham-raisin cookies

Makes about 10 cookies

 

1/2 cup granulated sugar

1/3 cup butter, softened

1 teaspoon vanilla extract

1/8 teaspoon salt

1 large egg, lightly beaten

1 cup self-rising flour 

1 cup crushed graham crackers

1/2 cup raisins

Cooking spray

 

Preheat oven to 350°.

 

Combine first 5 ingredients in a medium bowl until light and fluffy. Combine flour and crushed graham crackers; add to egg mixture, stirring until blended. Stir in raisins. 

 

Drop by level tablespoons 2 inches apart onto baking sheets coated with cooking spray. Bake at 350° for 15 minutes or until golden brown. 

 

Cool on pan for 3 minutes. Remove cookies from pan; cool on wire racks.
