golden beet bisque with bleu cheese

Ingredients:

1 1/2 pounds golden beets, peeled & cubed

1 large parnship (about 1/2 pound), peeled & cut into 2-inch pieces

1 tablespoon olive oil

1 (15-ounce) can less-sodium chicken broth

1/4 teaspoon Kosher salt

1 cup 1% low-fat milk

1/4 cup heavy cream

Crumbled bleu cheese

 

Instructions 

Preheat oven to 400 degrees F. Line a baking sheet with parchment. 

Combine beets, parnship & olive oil; place on baking sheet in one layer. Roast at 400 degrees F for 30 - 40 minutes or until tender. 

Place in a large saucepan; add chicken broth and salt. Bring to a boil, reduce heat and simmer 10 minutes. Remove from heat; stir in half of milk and process until smooth using hand blender. Stir in remaining milk and cream. Top with crumbled bleu cheese.

Makes 2 entree servings or 3 to 4 appetizer size servings
