fruited orange-oatmeal bread

Cooking spray

1 tablespoon sugar 

2 cups all-purpose flour

1/2 cup rolled oats

1 cup dried cherries, raisins or chopped prunes

2/3 cup sugar

1 tablespoon baking powder

1 teaspoon salt

1 tablespoon orange zest

1 cup prune juice

1/2 cup buttermilk

3 tablespoons oil

1 large egg, lightly beaten

 

Preheat oven to 350°. Coat a 9- x 5-inch loaf pan with cooking spray; sprinkle 1 tablespoon sugar in bottom and up sides of pan. 

 

Combine first 7 ingredients (through zest) in a large bowl. Combine prune juice and the remaining ingredients in a bowl; stir well. Add to dry ingredients, stirring just until moistened.

 

Pour batter into a 9 x 5-inch loaf pan coated with cooking spray. Bake at 350° for 1 hour or until a wooden pick inserted in center comes out clean. Remove from pan; let cool on a wire rack.
