Flax-Filled Fall Oatmeal

3 cups low-fat (1%) milk
1 1/2 cups regular oats
1/3 cup ground flaxseed
1/4 cup brown sugar
1 ripe pear or apple, coarsely chopped
1/2 teaspoon ground cinnamon
Pinch of nutmeg
1/4 teaspoon Kosher salt
1/4 cup walnuts, toasted
Combine milk and next 7 ingredients (through salt) in a medium saucepan. Bring to a boil over medium heat. Cover, reduce heat, and simmer 5 minutes or until thick. Sprinkle with walnuts. Yield: 4 servings (serving size: about 1 cup)
