curried beef skewers with spicy peanut sauce

Ingredients:

Wooden skewers

2 limes, cut in half

1 pound strip steak, trimmed and cut into strips

1 teaspoon curry powder

3 tablespoons natural creamy peanut butter

2 tablespoons reduced-sodium soy sauce

2 tablespoons orange juice

2 tablespoons mirin

1 tablespoon Sriracha

1/2 tablespoon sesame oil

 

Instructions:

Soak wooden skewers in water; let stand 1 hour. Meanwhile, squeeze lime juice over beef and sprinkle with curry powder; marinate in refrigerator 1 hour.

Combine remaining ingredients (through sesame oil) in a small bowl; refrigerate until ready to serve.

Heat a grill pan over medium-high heat. Thread beef onto skewers. Grill 1 - 2 minutes on each side or until desired degree of doneness. Serve with dipping sauce.
