Chicken-and-Asparagus Pesto Pizza
1 ball pizza dough (I love this version from MyRecipes.com)
2 tablespoons creamy pesto (make your own by combining equal parts pesto & mayo)
3/4 cup sliced, roasted asparagus
3/4 cup shredded, cooked chicken breast (about 1 medium breast)
3/4 cup cubed, roasted red bell pepper (about 1 whole red bell pepper)
1 cup (4 ounces) 50% reduced-fat sharp cheddar or part-skim mozzarella cheese
Place baking stone in oven and preheat oven to 425 degrees.
Press dough into circle. Top with ingredients. Place pizza on preheated pizza stone (I first press dough onto a large baking sheet dusted with cornmeal for easy transfer to hot pizza stone.) Bake for 10-15 minutes.
