Smokey Turkey-and-Pepper Pizza

The perfect after-holiday meal, this recipe makes great use of leftover turkey. Feel free to substitute leftover cooked chicken or pulled pork, as well.

 

1 ½ cups frozen pepper stir-fry blend (containing onions, red, green and yellow bell peppers), thawed

1 (13.8-ounce) can refrigerated pizza dough

1/3 cup barbecue sauce

1 ½ cups chopped, cooked turkey breast

1/2 cup frozen corn kernels, thawed

1 ½ cups (6 ounces) shredded 50% reduced-fat white sharp cheddar cheese or part-skim mozzarella cheese

 

Preheat oven to 400 degrees.

 

Saute pepper blend in a small nonstick skillet for 5 to 7 minutes or until tender; set aside.

 

Roll pizza dough out onto a baking sheet coated with cooking spray. Bake at 400 degrees for 5 minutes; remove from oven. Combine barbecue sauce and cocoa; spread over pizza crust. Top with cooked pepper blend, turkey and cheese.

 

Bake an additional 8 to 10 minutes or until cheese melts. Yield: 6 servings
